- Preheat the oven to 425°F. Mix sweet chili sauce, soy sauce, lime juice, vinegar, ginger, garlic, and sesame oil.
- Mix cornstarch with cold water. Pat chicken dry and season with salt and pepper.
- Heat oil in an oven-safe skillet. Sear chicken smooth-side down for 4–5 minutes; flip and cook 2 minutes.
- Add half the sauce around the chicken. Bake for 6–9 minutes, until the thickest piece reaches 165°F.
- Simmer reserved sauce, add slurry, and cook for 45–60 seconds. Brush it over the chicken.
- Broil for 1–2 minutes, rest for 5 minutes, then add green onions, sesame seeds, and lime.
