Ingredients
  

  • 3 pounds 1.36 kg gold potatoes, cut into 1½-inch (3.8 cm) pieces
  • 1 small onion chopped
  • Tbsp 22 mL olive oil
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • tsp Cajun seasoning
  • 1 pound 454 g fully cooked smoked kielbasa, sliced
  • 1 pound 454 g fresh green beans, cut into 2-inch (5 cm) pieces
  • 1 packet dry onion soup mix
  • ½ tsp garlic powder
  • ½ cup 113 g butter, cut into pieces

Method
 

  1. Place the 1½-inch potato pieces and chopped onion in the bottom of a 6-quart slow cooker.
  2. Add the olive oil, salt, pepper, and Cajun seasoning. Toss to coat. Layer the sliced fully cooked kielbasa and fresh green beans over the potatoes.
  3. Sprinkle the dry onion soup mix and garlic powder evenly over the ingredients. Distribute the butter pieces across the top.
  4. Cover and cook on Low for 6–7 hours, stirring a few times. Begin checking at 5 hours. The dish is ready when a fork or knife enters the potatoes easily while the pieces still hold their shape. Stir gently and serve warm.
