Slow Cooker Chicken and Dumplings

Ingredients
  

  • 1 large onion diced
  • 10.5 oz condensed cream of celery soup
  • 10.5 oz condensed cream of chicken soup
  • 1 Tbsp chopped fresh parsley
  • 1 tsp poultry seasoning
  • Black pepper to taste
  • 4 boneless skinless chicken breasts
  • 2 cups reduced-sodium chicken broth
  • 2 cups frozen vegetables or peas and carrots thawed
  • 16.3 oz refrigerated buttermilk country, or homestyle biscuits

Method
 

  1. Add onion to a 6-quart slow cooker and top with chicken breasts. Stir both condensed soups, parsley, poultry seasoning, and black pepper together, spread over the chicken, and add broth.
  2. Cover and cook on High for approximately 5 hours, until the chicken reaches 165°F (74°C) and pulls apart easily.
  3. About 60–90 minutes before serving, roll biscuits thin, cut each into four strips, add thawed vegetables, and place biscuit strips over the mixture. Replace the lid quickly.
  4. When dumpling centers are no longer raw, remove and slightly shred the chicken. Return it to the slow cooker, cook 10 minutes more, and serve hot.
