No-Bake Pumpkin-Spice Energy Balls

Ingredients
  

  • 1 cup pitted Medjool dates about 8 oz (227 g)
  • 1 cup old-fashioned rolled oats or quick oats about 80 g
  • ¼ cup toasted pecan halves about 27 g
  • ¼ cup plain pumpkin purée about 61 g
  • 1 Tbsp pure maple syrup plus 1–3 tsp more if desired
  • 1 Tbsp chia seeds or ground flaxseed meal
  • tsp pumpkin pie spice
  • 1 tsp pure vanilla extract
  • ¼ tsp maple flavoring or maple extract optional
  • tsp kosher salt

Method
 

  1. If the dates are dry or hard, soak them in hot water for 10 minutes. Drain and pat dry.
  2. Pulse the dates in a food processor fitted with a steel blade until they form a sticky ball.
  3. Add the oats, pecans, pumpkin purée, 1 Tbsp maple syrup, chia or flax, pumpkin spice, vanilla, optional maple extract, and salt. Pulse until combined but still slightly textured.
  4. Taste and add 1–3 tsp additional maple syrup if desired.
  5. Cover and refrigerate the mixture for at least 30 minutes.
  6. Scoop and roll the mixture into approximately 12 balls.
  7. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 2 months.
