Loaded Cheesy Cauliflower Bake With Turkey Bacon

Ingredients
  

  • 2 lb cauliflower florets 900 g
  • 1 Tbsp olive oil 14 g
  • ¾ tsp kosher salt 4 g, divided
  • ½ tsp ground black pepper 1 g, divided
  • 8 slices turkey bacon 160 g
  • 4 oz cream cheese softened (113 g)
  • ½ cup sour cream 120 g
  • cups shredded sharp cheddar cheese 170 g, divided
  • 2 garlic cloves minced, about 2 tsp (6 g)
  • ½ tsp onion powder 1.5 g
  • ¼ tsp smoked paprika 0.5 g
  • 3 green onions sliced, about ⅓ cup (30 g), divided
  • 2 Tbsp chopped fresh chives 6 g, optional

Method
 

  1. Preheat oven to 425°F. Toss cauliflower with olive oil, ½ tsp salt, and ¼ tsp pepper. Roast for 18–20 minutes until lightly browned and just tender.
  2. Meanwhile, cook turkey bacon over medium heat for 6–8 minutes until crisp. Chop it, then mix cream cheese, sour cream, 1 cup cheddar, garlic, onion powder, paprika, remaining salt and pepper, and half the green onions.
  3. Fold roasted cauliflower and two-thirds of the turkey bacon into the cheese mixture. Transfer to a greased 2-quart baking dish and top with remaining cheddar and bacon.
  4. Reduce oven to 400°F and bake for 15–18 minutes until hot, bubbly, and lightly golden. Rest for 5 minutes, then finish with remaining green onions and chives.
