  • 1 cup 240 ml / 245 g buttermilk
  • 1 teaspoon kosher salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
Crispy Coating
  • cups 190 g all-purpose flour
  • ½ cup 60 g cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon cayenne pepper optional
  • Vegetable or peanut oil for frying
Hot Honey
  • cup 110 g honey
  • 1 tablespoon hot sauce
  • ½ teaspoon red pepper flakes
  • 1 teaspoon melted butter
  • 1 teaspoon apple cider vinegar
For Serving
  • 4 brioche buns
  • 2 tablespoons butter softened
  • ½ cup mayonnaise
  • 8 dill pickle slices
  • 1 cup shredded lettuce

Method
 

Instructions
  1. Marinate the chicken in buttermilk, salt, paprika, garlic powder, onion powder, and black pepper for at least 30 minutes.
  2. Mix the flour, cornstarch, baking powder, salt, smoked paprika, garlic powder, and cayenne. Coat each chicken cutlet thoroughly.
  3. Heat oil to 350°F (175°C) and fry the chicken for 4–5 minutes per side until golden brown and the internal temperature reaches 165°F (74°C).
  4. Warm together the honey, hot sauce, red pepper flakes, butter, and apple cider vinegar for 2–3 minutes.
  5. Butter and toast the brioche buns until lightly golden.
  6. Spread mayonnaise on the buns, add lettuce, fried chicken, hot honey, pickles, and the top bun. Serve immediately.
