  • ½ cup 30 g panko breadcrumbs
  • cup 80 ml or 80 g 2% milk
  • 2 large eggs 100 g without shells
  • ½ medium yellow onion finely grated (75 g)
  • 3 garlic cloves minced (9 g)
  • ½ cup finely grated Parmesan cheese 45 g
  • ¼ cup chopped fresh parsley 15 g
  • 2 teaspoons Italian seasoning 4 g
  • teaspoons kosher salt 8 g
  • ½ teaspoon ground black pepper 1 g
  • 2 pounds 93% lean ground turkey 907 g
  • 1 tablespoon olive oil 15 ml or 14 g
  • 2 cups warm marinara sauce 480 g, optional

Instructions
  1. Preheat the oven to 400°F. Line and lightly grease a large rimmed baking sheet.
  2. Stir together the panko and milk in a large bowl. Let the mixture rest for 5 minutes.
  3. Whisk in the eggs, onion, garlic, Parmesan, parsley, Italian seasoning, salt, and pepper.
  4. Fold in the ground turkey just until evenly combined.
  5. Shape the mixture into 24 equal 1½-inch meatballs and arrange them 1 inch apart.
  6. Brush the tops lightly with olive oil.
  7. Bake for 15–18 minutes, until lightly browned and 165°F in the centers.
  8. Rest for 5 minutes, then serve plain or with warm marinara.
