Halloween Meatball Eyeballs: A Fun Spooky Party Recipe

Ingredients
  

  • 1 lb 454 g lean ground beef
  • ½ cup 50 g grated Parmesan cheese
  • cup panko breadcrumbs
  • 1 large egg
  • 2 garlic cloves minced
  • 1 tsp dried parsley flakes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 Tbsp olive oil
  • 8 black olives halved
  • 1 oz 28 g stick string cheese, cut into 16 slices
  • 8 oz 227 g spaghetti
  • 16 oz 454 g spaghetti sauce

Method
 

  1. Bring a large pot of lightly salted water to a boil. Cook spaghetti for about 12 minutes, until tender but firm. Drain and set aside. Preheat the oven to 400°F (200°C).
  2. Mix Parmesan, panko, egg, garlic, parsley, basil, and oregano in a large bowl. Fold in the ground beef and form 16 equal-sized meatballs.
  3. Heat olive oil in a large skillet over medium-high heat. Brown meatballs for 3 minutes per side. Transfer them to a baking sheet and bake for 8 minutes, or until the center reaches 160°F (71°C).
  4. Punch pupils from the olive halves and holes in the string-cheese slices with a plastic straw. Insert the olive pieces into the cheese. Cool the meatballs briefly, add a small dot of sauce, place one eye on each meatball, and serve over spaghetti with warm sauce.
