  • Salt and pepper to taste
  • 1 Tbsp 15 mL chili powder
  • 1 tsp 5 mL smoked paprika

  • ¼ tsp 1.25 mL cayenne
  • ¾ cup about 177 mL by volume canned pinto beans, drained
  • ¾ cup about 177 mL by volume corn kernels
  • 12 oz 340 g jarred salsa
  • 32 tortilla chips about 4 oz (113 g)
  • 1 cup about 237 mL by volume shredded reduced-fat Mexican cheese blend
  • 2 Tbsp chopped cilantro
  • Pickled red onions for topping
  • ¼ cup chopped tomatoes
  • Lime wedges for serving
  • Guacamole sour cream, or avocado, optional for topping

  1. Heat olive oil in a large skillet with a fitting lid over medium heat. Add the finely chopped onion and diced, seeded jalapeño; sauté 2–3 minutes.
  2. Add the ground turkey, season with salt and pepper to taste, and cook while breaking it into small crumbles until browned. Check several representative crumbles with a food thermometer; cook to 165°F (74°C).
  3. Stir in the chili powder, smoked paprika, cumin, cayenne, drained pinto beans, corn, and salsa. Mix well and cook 3 minutes.
