  • ½ tsp ground cumin
  • ½ tsp dried oregano
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ cup low-sodium chicken broth
  • 2 cups baby spinach
  • 1 tbsp fresh lime juice
  • 2 tbsp chopped cilantro optional

Method
 

Instructions
  1. Brown the ground turkey in olive oil and transfer it to a plate.
  2. Cook the onion, bell pepper, sweet potatoes, spices, and broth until the potatoes are nearly tender.
  3. Add the garlic and cook uncovered until the potatoes are lightly caramelized.
  4. Return the turkey to the skillet and stir everything together.
  5. Fold in the spinach until wilted, then finish with lime juice and cilantro before serving.
