For the Crust and Crumble
  • 1 3/4 cups all-purpose flour 219 g
  • 1 cup old-fashioned rolled oats 90 g
  • 3/4 cup packed light brown sugar 150 g
  • 1 teaspoon ground cinnamon 2.5 g
  • 1/2 teaspoon fine salt 3 g
  • 3/4 cup unsalted butter melted and slightly cooled (170 g)
  • 1 teaspoon pure vanilla extract 5 ml
For the Peach Filling
  • 5 cups diced fresh peaches 750 g
  • 1/3 cup granulated sugar 67 g
  • 3 tablespoons cornstarch 24 g
  • 1 tablespoon fresh lemon juice 15 ml
  • 1 teaspoon pure vanilla extract 5 ml
  • 1/4 teaspoon ground cinnamon 0.6 g
  • 1/8 teaspoon fine salt 0.75 g

Method
 

Instructions
  1. Heat the oven to 350°F (175°C). Line and lightly grease a 9 x 13-inch metal baking pan.
  2. Combine the flour, oats, brown sugar, cinnamon, and salt. Stir in the melted butter and vanilla.
  3. Press two-thirds of the crumble into the pan and bake for 12 minutes.
  4. Toss the peaches with the granulated sugar, cornstarch, lemon juice, vanilla, cinnamon, and salt.
  5. Spread the peach mixture over the warm crust and scatter the remaining crumble on top.
  6. Bake for 35 to 40 minutes, until the topping is golden and the center is bubbling.
  7. Cool for at least 2 hours before lifting out and slicing into 16 bars.
