  • 2 lb 900 g ground beef
  • 1 cup 60 g breadcrumbs
  • ½ cup 120 ml whole milk
  • 1 medium onion diced
  • 2 garlic cloves minced
  • 2 eggs
  • 2 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • ½ tsp smoked paprika
Glaze
  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard

Method
 

Instructions
  1. Preheat oven to 350°F (175°C).
  2. Soak breadcrumbs in milk for 3 minutes.
  3. Mix remaining ingredients except beef, then gently fold in beef.
  4. Shape into a loaf and prepare glaze.
  5. Brush with half the glaze and bake for 40 minutes.
  6. Add remaining glaze and bake another 20–25 minutes until 160°F (71°C).
  7. Rest for 10 minutes before slicing and serving.

A great meatloaf doesn't need fancy ingredients or complicated steps. With a few pantry staples and one simple trick—soaking the breadcrumbs—you'll end up with a tender, juicy dinner that's comforting every single time.
