Ingredients
  

Chocolate brownies
  • 3 oz 85 g unsweetened dark chocolate, chopped
  • ½ cup 113 g unsalted butter, melted
  • 2 large eggs
  • cups 250 g granulated sugar
  • 1 tsp vanilla extract
  • ¾ tsp kosher salt
  • cup 83 g all-purpose flour
Cheesecake ghosts
  • 4 oz 113 g softened cream cheese
  • 2 Tbsp 25 g white sugar
  • 1 large egg white
  • ¼ tsp vanilla extract

Method
 

  1. Grease and parchment-line an 8×8-inch baking dish.
  2. Place chopped chocolate in a heatproof bowl. Melt butter in a saucepan over medium heat, pour it over the chocolate, wait 5 minutes, and stir smooth.
  3. Beat eggs and sugar on high until pale and light. Add vanilla and salt, mixing for 1 minute. Mix in the chocolate-butter mixture for 30 seconds, then fold in flour. Reserve 2 tsp batter.
  4. Spread the remaining batter evenly in the prepared pan.
  5. Whisk cream cheese, sugar, egg white, and vanilla. Place 9 Tbsp-sized dollops over the batter and shape them into ghosts with a spoon and bamboo skewer.
  6. Pipe eyes and mouths with the reserved brownie batter. Bake at 350°F (175°C) for 35–40 minutes, until edges are lightly golden and the center is just set.
  7. Cool completely in the pan, then lift out and cut into 9 squares.
