Blackberry Filling
  • 6 cups fresh blackberries 850 g
  • 3/4 cup granulated sugar 150 g
  • 3 tablespoons cornstarch 24 g
  • 1 tablespoon fresh lemon juice 15 ml
  • 1 teaspoon finely grated lemon zest 2 g
  • 1 teaspoon pure vanilla extract 5 ml
  • 1/8 teaspoon fine salt 0.75 g
Biscuit Topping
  • 2 cups all-purpose flour 250 g
  • 1/3 cup granulated sugar 67 g
  • 2 1/2 teaspoons baking powder 10 g
  • 1/2 teaspoon fine salt 3 g
  • 1/2 cup cold unsalted butter cubed (113 g)
  • 3/4 cup cold buttermilk 180 ml
  • 1 tablespoon coarse or granulated sugar 12 g

Method
 

Instructions
  1. Heat the oven to 375°F (190°C) and grease a 9 x 13-inch baking dish.
  2. Toss the blackberries with the sugar, cornstarch, lemon juice, lemon zest, vanilla, and salt in the dish.
  3. Whisk the flour, sugar, baking powder, and salt. Cut in the cold butter until coarse crumbs form.
  4. Stir in the cold buttermilk just until a shaggy dough forms.
  5. Drop spoonfuls of dough over the berries, leaving small gaps, and sprinkle with sugar.
  6. Bake for 40 to 45 minutes, until the topping is golden and the filling bubbles in the center.
  7. Cool for at least 30 minutes before serving.
