Easy Black Bean Burrito Recipe With Rice and Veggies

Ingredients
  

For the Filling
  • 1 medium onion chopped
  • 1 medium green or yellow bell pepper stemmed, seeded, and chopped
  • ½ –1 jalapeño stemmed, seeded, and finely diced
  • 2 garlic cloves minced
  • 4 cups cooked brown rice approximately 780 grams
  • cups diced fresh tomatoes or canned fire-roasted tomatoes approximately 255 grams, with the tomato liquid reserved
  • cups cooked black beans approximately 255 grams, or 1 (15-ounce/425-gram) can, rinsed and drained
  • 1 tsp ground cumin
  • 1 tsp ancho chile powder
  • ½ tsp chipotle chile powder
  • ½ tsp smoked paprika
  • Salt to taste
  • Freshly ground black pepper to taste
  • Reserved tomato juice or vegetable broth only if needed to prevent dryness
For Assembly
  • 8 whole-grain tortillas 7–8 inches/18–20 cm
  • Hot pepper sauce optional, for serving

Method
 

  1. Heat a deep nonstick skillet over medium-high heat. Add the onion and cook, stirring regularly, until it begins to brown.
  2. Add the bell pepper, jalapeño, and garlic. Cook for approximately 2 minutes, stirring frequently so the garlic doesn’t burn.
  3. Stir in the cooked brown rice, tomatoes, black beans, cumin, ancho chile powder, chipotle chile powder, and smoked paprika. Cook over medium-high heat for approximately 15 minutes, stirring frequently. Add a small amount of reserved tomato juice or vegetable broth if the mixture becomes dry. Season with salt and black pepper as needed.
  4. Warm each tortilla in a separate dry nonstick skillet over medium heat for approximately 40 seconds, turning once. Keep the warmed tortillas covered with a damp clean kitchen towel.
  5. Place approximately 1 cup of filling just below the center of each tortilla. Fold the bottom edge over the filling, fold both sides inward, and roll closed. Arrange seam-side down and serve warm with optional hot pepper sauce.
