Ingredients
  

For the Cookies
  • 2 cups plus 2 Tbsp all-purpose flour 270 g
  • 2 tsp baking powder
  • 1 tsp cornstarch
  • 1/2 tsp fine sea salt
  • 2 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 1 tsp ground ginger
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cloves
  • 10 Tbsp unsalted butter at cool room temperature (142 g)
  • 1 cup granulated sugar 200 g
  • 2 Tbsp honey approximately 42 g
  • 1 large egg at cool room temperature
  • 1 large egg yolk at cool room temperature
For the Espresso Glaze
  • 1 1/4 cups powdered sugar sifted (156 g)
  • 2 Tbsp prepared espresso or very strong coffee 30 mL

Method
 

  1. Preheat the oven to 350°F (177°C). Line two light-colored aluminum 13-by-18-inch half-sheet pans with parchment. Whisk together the flour, baking powder, cornstarch, salt, cinnamon, cardamom, ginger, allspice, and cloves.
  2. Beat the butter and granulated sugar for about 3 minutes, until light and fluffy. Beat in the whole egg, egg yolk, and honey. Gradually mix in the dry ingredients on low just until combined. Scoop 1 1/2-Tbsp portions 2 inches apart and flatten gently with a spatula.
  3. Bake for 12–14 minutes, until the cookies are just set and slightly golden while their centers remain soft. Cool on the pans for 2 minutes, then transfer to wire racks and cool completely.
  4. Whisk the sifted powdered sugar with the espresso or strong coffee until thick but pourable. Drizzle over the cooled cookies and let the glaze dry completely before stacking or storing.
