Sweet corn is coated in Cajun garlic butter, sealed in individual foil packets, and cooked on the grill or in the oven until juicy and tender.

  • 6 medium ears fresh sweet corn shucked and cut crosswise into thirds (about 2 pounds / 900 g total, approximate)
  • 6 tablespoons unsalted butter melted (3 ounces / 85 g)
  • 2 1/2 teaspoons Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon fresh lemon juice 15 ml
  • 2 tablespoons chopped fresh parsley

  1. Heat a grill to medium-high, about 400–425°F, or preheat the oven to 425°F. Tear six approximately 12-by-16-inch sheets of heavy-duty foil.
  2. Combine the melted butter, Cajun seasoning, garlic powder, kosher salt, and black pepper. Toss the corn pieces in the seasoned butter until evenly coated.
  3. Divide three corn pieces among each foil sheet. Spoon over any remaining butter, then double-fold the long edges and fold in the short ends, leaving a little space for steam.
  4. Grill for 15–18 minutes, turning once halfway through, or place on a rimmed baking sheet and bake at 425°F for 22–25 minutes. The corn is ready when the kernels are plump and tender when pierced.
  5. Carefully open the packets away from your face. Drizzle with lemon juice, sprinkle with parsley, and turn the corn through the melted butter before serving.
