Ingredients
  

Streusel
  • cup 67 g packed brown sugar
  • 1 Tbsp 15 g granulated sugar
  • 1 tsp cinnamon
  • ¼ cup 4 Tbsp/56 g melted unsalted butter
  • cup 84 g all-purpose flour
Muffins
  • cups 219 g all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ cup 113 g softened unsalted butter
  • ½ cup 100 g packed brown sugar
  • ¼ cup 50 g granulated sugar
  • 2 large eggs room temperature
  • ½ cup 120 g plain yogurt or sour cream, room temperature
  • 2 tsp vanilla extract
  • ¼ cup 60 ml milk, room temperature
  • cups 180 g peeled apples, chopped into ½-inch pieces
Optional Icing
  • 1 cup 120 g confectioners’ sugar
  • 3 Tbsp 45 ml heavy cream or milk
  • ½ tsp vanilla extract

Method
 

  1. Preheat oven to 425°F (218°C). Prepare a standard 12-cup muffin pan.
  2. Make the streusel by combining the sugars and cinnamon, then mixing in melted butter and flour until large crumbs form.
  3. Whisk the dry muffin ingredients. Separately, cream the butter and sugars for about 3 minutes. Add eggs, yogurt or sour cream, and vanilla.
  4. Mix in the dry ingredients and milk until just combined. Fold in the chopped apples.
  5. Fill muffin cups to the top, add streusel, and bake at 425°F for 5 minutes. Reduce to 350°F (177°C) and bake 15–18 minutes more.
  6. Cool in the pan for 5 minutes, then transfer to a rack. Add optional icing after whisking it smooth.
